Ingredients
8 cups Granny Smith apples, peeled and diced (about 6 apples)
2 cups organic apple juice
Zest and juice of 1 small lemon
1 tablespoon apple cider vinegar
Pinch of salt
3 tablespoons pectin
1.5 teaspoons ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground cardamom
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
3 cups white granulated sugar
Instructions

Peel and dice apples to measure 8 cups.

In a large pot, combine apples, apple juice, lemon zest and juice, apple cider vinegar, and a pinch of salt. Bring to a gentle boil over medium heat.

Stir in pectin, then add cinnamon, ginger, cardamom, cloves, and nutmeg. Mix well.

Reduce heat and simmer, stirring frequently, until the mixture thickens to jam consistency.
