Ingredients

8 cups Granny Smith apples, peeled and diced (about 6 apples)

2 cups organic apple juice

Zest and juice of 1 small lemon

1 tablespoon apple cider vinegar

Pinch of salt

3 tablespoons pectin

1.5 teaspoons ground cinnamon

½ teaspoon ground ginger

½ teaspoon ground cardamom

¼ teaspoon ground cloves

¼ teaspoon ground nutmeg

3 cups white granulated sugar


Instructions

  1. Peel and dice apples to measure 8 cups.

  2. In a large pot, combine apples, apple juice, lemon zest and juice, apple cider vinegar, and a pinch of salt. Bring to a gentle boil over medium heat.

  3. Stir in pectin, then add cinnamon, ginger, cardamom, cloves, and nutmeg. Mix well.

  4. Gradually add sugar, stirring until fully combined.

  5. Reduce heat and simmer, stirring frequently, until the mixture thickens to jam consistency.

  6. Pour hot jam into sterilized jars, seal tightly, and let cool.

  7. Store in the refrigerator or freezer as directed.

Notes

Stir frequently to prevent sticking or burning.

Sterilize jars by boiling for 10 minutes to ensure safe storage.
