These homemade Berry Oat Bars are chewy, fruity, and wholesome. Packed with oats, berries, and natural sweetness, they’re the perfect snack, breakfast bite, or dessert bar. Easy to make and meal-prep friendly!
Ingredients
½ cup coconut oil, melted
1 ½ cups all-purpose flour (or gluten-free substitute)
1 ½ cups quick oats
⅓ cup maple syrup
⅓ cup coconut sugar (or granulated sugar)
1 teaspoon baking powder
½ teaspoon salt
½ cup raspberry preserves (or berry jam of choice)
Instructions

Preheat Oven – Preheat to 350°F (175°C) and lightly grease a baking dish.

Mix Dry Ingredients – In a large bowl, combine flour, oats, baking powder, and salt.

Mix Wet Ingredients – In a separate bowl, whisk together melted coconut oil, maple syrup, and coconut sugar until smooth.

Combine – Pour wet ingredients into dry and mix until a sticky dough forms.

Form Base – Press two-thirds of the dough evenly into the prepared dish.

Add Filling – Spread raspberry preserves evenly over the base.

Top Layer – Crumble the remaining dough on top of the preserves.

Bake – Bake for 25–30 minutes, or until golden brown.

Cool & Slice – Let cool completely before cutting into bars.
Notes
You can substitute raspberry preserves with strawberry, blueberry, or mixed berry jam.
For added texture, sprinkle chopped nuts or seeds on top before baking.
