Ingredients

Pickling Brine:

¾ cup apple cider vinegar

¾ cup white vinegar

½ cup water

1 cup granulated sugar

1½ tbsp kosher salt

½ tsp ground turmeric

Vegetables & Spices:

lbs Persian cucumbers (or small pickling cucumbers), sliced ¼-inch thick

¼ cup thinly sliced white or yellow onion

1 tsp celery seeds

1 tsp mustard seeds


Instructions

  • Prepare the Brine

    • In a medium saucepan, combine apple cider vinegar, white vinegar, water, sugar, salt, and turmeric.

    • Bring to a boil over medium heat.

    • Remove from heat and let cool to room temperature.

  • Prepare Cucumbers and Onion

    • Wash and slice cucumbers into ¼-inch rounds.

    • Combine cucumber slices and onion in a large bowl.

  • Add Spices

    • Mix in celery seeds and mustard seeds with cucumbers and onions.

  • Combine Brine and Vegetables

    • Pour the cooled brine over the cucumber mixture.

    • Stir gently to coat all slices evenly.

  • Marinate

    • Let pickles sit at room temperature for 1–2 hours.

    • For best flavor, refrigerate overnight before serving.

Notes

Use sterilized jars for long-term storage.

For extra crunch, choose firm cucumbers.
