Ingredients
Pickling Brine:
¾ cup apple cider vinegar
¾ cup white vinegar
½ cup water
1 cup granulated sugar
1½ tbsp kosher salt
½ tsp ground turmeric
Vegetables & Spices:
1¼ lbs Persian cucumbers (or small pickling cucumbers), sliced ¼-inch thick
¼ cup thinly sliced white or yellow onion
1 tsp celery seeds
1 tsp mustard seeds

Prepare the Brine

In a medium saucepan, combine apple cider vinegar, white vinegar, water, sugar, salt, and turmeric.

Bring to a boil over medium heat.

Remove from heat and let cool to room temperature.

Prepare Cucumbers and Onion

Wash and slice cucumbers into ¼-inch rounds.

Combine cucumber slices and onion in a large bowl.

Mix in celery seeds and mustard seeds with cucumbers and onions.

Pour the cooled brine over the cucumber mixture.
