Ingredients

12 oz pasta (penne, rotini, or fettuccine)

4 cups water (for boiling)

1 teaspoon salt

Broccoli

2 cups broccoli florets (bite-sized)

1 teaspoon olive oil

1 clove garlic, minced

¼ teaspoon salt

Cheese Sauce

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups whole milk (for creaminess)

1 cup shredded cheddar cheese (or mix with mozzarella & Parmesan)

½ teaspoon mustard powder (optional)

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon paprika


Instructions

Step 1 – Boil Pasta

  1. Bring 4 cups of water and 1 teaspoon salt to a boil.

  2. Add 12 oz pasta and cook until al dente (8–10 minutes).

  3. Reserve ½ cup pasta water, then drain and set aside.

Step 2 – Sauté Broccoli

  1. Heat 1 teaspoon olive oil in a skillet over medium heat.

  2. Add broccoli florets and garlic, sauté 3–4 minutes until crisp-tender.

  3. Season with ¼ teaspoon salt. Remove from heat.

Step 3 – Make Roux

  1. In a saucepan, melt 2 tablespoons butter over medium heat.

  2. Stir in 2 tablespoons flour and whisk for 1 minute.

Step 4 – Create Cheese Sauce

  1. Gradually whisk in 2 cups milk until smooth.

  2. Simmer 2–3 minutes until slightly thickened.

  3. Lower heat, add shredded cheese gradually, whisking until melted.

  4. Stir in mustard powder, salt, pepper, and paprika.

Step 5 – Combine

  1. Return pasta to the pot, pour cheese sauce over.

  2. Add broccoli and gently toss.

  3. If sauce is too thick, add reserved pasta water 1–2 tbsp at a time.

Step 6 – Serve

  • Garnish with Parmesan, parsley, smoked paprika, or lemon juice.

  • Serve warm and enjoy!

Notes

For protein, add grilled chicken or shrimp.

Use a mix of cheddar & Parmesan for richer flavor.
