12 tbsp olive oil

1 medium onion, chopped

23 cloves garlic, minced

3 medium potatoes, peeled and diced

1 tsp salt

½ tsp black pepper

1 tsp paprika

½ tsp dried oregano

11.5 cups shredded cheddar cheese

1 cup beef broth

1 tbsp fresh parsley, chopped (for garnish)


Instructions

Step 1 – Sauté Onions:

  • Heat olive oil in a large skillet over medium heat.

  • Add chopped onion and cook for 3–4 minutes until softened.

Step 2 – Add Garlic:

  • Stir in minced garlic and cook for 1 minute until fragrant.

Step 3 – Cook Ground Beef:

  • Add ground beef to the skillet, breaking it apart with a spatula.

  • Cook until fully browned.

Step 4 – Season Beef:

  • Add salt, black pepper, paprika, and dried oregano.

  • Mix well to coat evenly.

Step 5 – Add Potatoes & Broth:

  • Stir in diced potatoes and beef broth.

  • Mix thoroughly to combine all ingredients.

Step 6 – Cook Potatoes:

  • Cover skillet, reduce heat to low, and cook for 20–25 minutes until potatoes are tender, stirring occasionally.

Step 7 – Add Cheese:

  • Sprinkle shredded cheddar over the top.

  • Cover and cook until the cheese is melted and gooey.

Step 8 – Garnish & Serve:

  • Remove from heat, sprinkle with chopped parsley, and serve hot.

Notes

Use medium potatoes for even cooking.
