Ingredients
1 lb ground beef
1 onion, chopped
1 clove garlic, minced
1 cup long-grain rice (uncooked)
2 cups beef broth
1 (10.75 oz) can cream of mushroom soup
1 cup shredded cheddar cheese
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika
¼ cup fresh parsley, chopped (for garnish)
Instructions
Preheat & Prep:
Preheat oven to 350°F (175°C). Grease a 9×13-inch casserole dish.
Cook Beef & Veggies:
In a large skillet over medium heat, brown ground beef until no pink remains. Drain excess fat. Add chopped onion and minced garlic; sauté 3–4 minutes until softened.
Add Rice & Seasoning:
Stir in uncooked rice and lightly toast for 1–2 minutes. Add beef broth, cream of mushroom soup, salt, pepper, and paprika. Mix well.
Assemble & Bake:
Transfer mixture to the prepared casserole dish. Spread evenly and sprinkle shredded cheddar on top. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15 minutes, until rice is tender and cheese is bubbly.
Rest & Serve:
Let casserole rest 5–10 minutes. Garnish with chopped parsley and serve warm.
Notes
Use a combination of cheddar and mozzarella for extra cheesy gooeyness.
