Description

This Chicken Curry Indian recipe is a flavorful blend of tender chicken, aromatic spices, and a rich coconut-tomato sauce. Perfect with rice or naan, it’s a comforting dish you’ll make again and again.


Ingredients

1 ½ lbs boneless chicken thighs (cut into bite-sized pieces)

1 medium onion, finely chopped

4 cloves garlic, minced

1 tbsp fresh ginger, grated

2 tbsp curry powder (or to taste)

1 can (14 oz) diced tomatoes

1 can (13.5 oz) full-fat coconut milk

1 tbsp oil (vegetable or coconut)

Salt & black pepper to taste

Fresh cilantro, chopped (for garnish)

Optional Spice Boosters:

½ tsp turmeric

1 tsp cumin

1 tsp garam masala


Instructions

Step 1 – Sauté the Base

  • Heat oil in a large skillet or pot over medium heat.

  • Add onion and cook until translucent (3–4 min).

  • Stir in garlic and ginger, cooking 1 more minute.

Step 2 – Toast the Spices

  • Add curry powder (and optional turmeric, cumin, garam masala).

  • Stir for 30 seconds until fragrant.

Step 3 – Cook the Chicken

  • Add chicken pieces. Sear until lightly browned on all sides (5–6 min).

Step 4 – Build the Sauce

  • Stir in diced tomatoes with juices and coconut milk.

  • Season with salt and pepper.

Step 5 – Simmer

  • Cover and simmer 20–25 minutes, stirring occasionally, until chicken is tender and sauce thickens.

Step 6 – Garnish & Serve

  • Remove from heat. Sprinkle fresh cilantro on top.

  • Serve hot with basmati rice, naan, or parathas.

Notes

For a creamier curry, replace half the coconut milk with yogurt or cream.

Spice level can be adjusted by adding chili powder or fresh green chilies.
