Ingredients
1 cup all-purpose flour
1/2 cup Dutch process cocoa or unsweetened cocoa
1 teaspoon baking soda
1/2 teaspoon sea salt
2 large eggs (room temperature)
1/4 cup unsalted butter (melted and slightly cooled)
1/4 cup canola oil, vegetable oil, or melted coconut oil
3/4 cup light brown sugar (packed)
1 teaspoon pure vanilla extract
1 1/2 cups shredded zucchini (packed, excess moisture squeezed out)
1 cup semisweet chocolate chips (divided)
Instructions

Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.

In a medium bowl, whisk together flour, cocoa, baking soda, and sea salt. Set aside.

In a large bowl, whisk eggs, melted butter, oil, and brown sugar until well combined.

Stir in vanilla extract.

Fold in shredded zucchini and 3/4 cup chocolate chips.

Gradually fold dry ingredients into wet mixture until just combined; do not overmix.

Pour batter into prepared loaf pan and sprinkle remaining chocolate chips on top.

Bake 50–60 minutes or until a toothpick inserted in the center comes out clean.

Let cool completely before slicing. Serve as is, or with a drizzle of chocolate or a dusting of powdered sugar.
