- 1 lb sirloin steak, cut into strips
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 12 oz bowtie pasta
- 1 tablespoon salt (for pasta water)
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tablespoons butter
- 1/2 cup beef broth
- 1 teaspoon Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions
- Season beef with garlic powder, salt, and pepper.
- Cook bowtie pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
- Heat olive oil in a skillet over medium-high. Sear beef for 3-4 minutes until browned, then remove and set aside.
- In the same skillet, melt butter and sauté garlic for 30 seconds. Add beef broth and reduce by half.
- Lower heat and stir in heavy cream. Gradually add Parmesan, whisking until smooth.
- Return beef to skillet, add drained pasta, and toss together. Use reserved pasta water to adjust consistency. Garnish with parsley and serve.
Notes
Bring cream to the pan over low heat to prevent curdling. Pull beef from the pan just before desired doneness, as it will continue cooking off heat.
