Description

Easy Crock Pot Chicken Pot Pie with tender chicken, creamy vegetables, and fluffy biscuits on top. A comforting slow-cooked dinner perfect for busy weeknights!


Ingredients

2 lbs boneless, skinless chicken breasts or thighs

2 cans (10.5 oz each) cream of chicken soup

1 can (10.5 oz) cream of celery soup

12 oz frozen mixed vegetables

2 tsp garlic powder, divided

2 tsp onion powder, divided

2 tsp black pepper, divided

1 can (16.3 oz) homestyle biscuits (or homemade drop biscuits)


Instructions

  1. Place chicken in the crock pot.

  2. Add cream of chicken soup, cream of celery soup, and frozen mixed vegetables.

  3. Stir in 2 tsp garlic powder, 2 tsp onion powder, and 2 tsp black pepper.

  4. Cover and cook on low 6–8 hours or high 4–5 hours.

  5. During the last 30 minutes, tear biscuits into pieces and place on top of the filling.

  6. Cook until biscuits are fluffy and golden.

  7. Serve warm.

Notes

Use chicken thighs for more tender, flavorful meat.

Sauté onions, carrots, and celery before adding for extra depth.
