Description

Hearty Crockpot Lasagna Soup with ground beef, tender pasta, ricotta, and mozzarella. Comforting, cheesy, and easy weeknight dinner.


Ingredients

1 lb ground beef

1 onion, diced

4 cups beef broth

1 can (15 oz) crushed tomatoes

1 tsp garlic powder

1 tsp Italian seasoning

Salt and black pepper, to taste

8 lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

Fresh basil for garnish


Instructions

  1. Brown meat: In a skillet over medium heat, cook ground beef until no longer pink.

  2. Sauté onion: Add diced onion and cook until translucent.

  3. Transfer to crockpot: Place cooked beef and onion into the crockpot.

  4. Add liquids & seasonings: Pour in beef broth and crushed tomatoes. Stir in garlic powder, Italian seasoning, salt, and pepper.

  5. Add noodles: Break lasagna noodles into smaller pieces and stir gently into the crockpot mixture.

  6. Cook: Cover and cook on low for 4 hours or high for 2 hours.

  7. Add cheeses (last 30 min): Stir in ricotta and shredded mozzarella for a creamy texture.

  8. Serve: Garnish with fresh basil before serving. Enjoy warm.

Substitute ground turkey or chicken for a lighter version.
