Fiesta Lime Chicken is a zesty Mexican-inspired dish featuring marinated chicken infused with lime, spices, and topped with fresh avocado salsa. Perfect for weeknights, dinner parties, or summer cookouts!
Ingredients
For the Chicken Marinade:
1 lb chicken breasts (pounded to even thickness)
2 tbsp olive oil
2 tbsp lime juice (about 1 lime)
Zest of 1 lime
1 tsp chili powder
1 tsp brown sugar
3/4 tsp salt
1/2 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/4–1/2 tsp chipotle chili powder (optional, for extra heat)
1/4 tsp black pepper
For the Avocado Salsa:
2 medium ripe but firm avocados, chopped
1 cup cherry tomatoes, quartered (or 2 Roma tomatoes, chopped)
1 ear fresh sweet corn (kernels only)
1/3 cup finely chopped red onion
1/2 red bell pepper, chopped
1 jalapeño, diced (seeds removed for less heat)
2 tbsp fresh cilantro, finely chopped
1 garlic clove, minced (or 1/4 tsp garlic powder)
2 tbsp lime juice
1/4 tsp ground cumin
1/4 tsp salt
1/8 tsp black pepper (adjust to taste)
Instructions

Marinate the Chicken:

In a bowl, whisk olive oil, lime juice, zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder (optional), and black pepper.

Coat chicken evenly, cover, and marinate in the fridge for at least 30 minutes.

Cook the Chicken:

Heat a grill or skillet over medium-high heat.

Cook chicken 6–8 minutes per side until golden and cooked through (internal temp: 165°F / 74°C).

Let rest for 5 minutes, then slice.

Prepare Avocado Salsa:

In a bowl, gently combine avocado, cherry tomatoes, corn, red onion, bell pepper, jalapeño, cilantro, and garlic.

Drizzle with lime juice, add cumin, salt, and black pepper. Toss lightly.
