4 boneless, skinless chicken breasts

1.5 pounds baby potatoes, halved

1 cup chicken broth

1/2 cup grated Parmesan cheese

4 cloves garlic, minced

1 tablespoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

2 tablespoons olive oil

Fresh parsley, for garnish (optional)


Instructions

Step 1: Prepare the potatoes
Rinse and halve the baby potatoes. Set aside.

Step 2: Make the garlic-parmesan mixture
In a medium bowl, combine grated Parmesan, minced garlic, Italian seasoning, salt, black pepper, and red pepper flakes (if using). Mix well and set aside.

Step 3: Sear the chicken
Heat olive oil in a skillet over medium heat until shimmering. Add chicken breasts and sear 2–3 minutes per side until lightly browned.

Step 4: Transfer to crockpot
Place the seared chicken in the crockpot.

Step 5: Add potatoes
Arrange halved baby potatoes around the chicken.

Step 6: Pour in chicken broth
Add chicken broth to coat the chicken and potatoes evenly.

Step 7: Top with garlic-parmesan mixture
Sprinkle the prepared mixture over the chicken and potatoes.

Step 8: Cook
Cover and cook:

  • On low for 6–8 hours, or

  • On high for 4 hours, until chicken is cooked and potatoes are tender.

Step 9: Serve

Notes
