Ingredients

4 boneless, skinless chicken thighs or breasts

1 tbsp olive oil

1 tsp smoked paprika

1 tsp dried oregano

½ tsp garlic powder

Salt and pepper, to taste

1 red onion, sliced

1 red bell pepper, sliced

1 zucchini, sliced into half moons

3 garlic cloves, minced

¼ cup sun-dried tomatoes, sliced

1 cup cherry tomatoes, halved

⅓ cup Kalamata olives, pitted and halved

¼ cup crumbled feta cheese

Juice of 1 lemon

Fresh parsley, for garnish


Instructions

  1. Season the Chicken – Pat chicken dry and season both sides with smoked paprika, oregano, garlic powder, salt, and pepper. Set aside.

  2. Heat the Skillet – Add 2 tbsp olive oil to a large skillet over medium heat. Heat until shimmering.

  3. Sear the Chicken – Cook chicken 5–7 minutes per side until golden brown and cooked through (165°F). Remove from skillet and set aside.

  4. Cook the Aromatics – In the same skillet, sauté red onion and bell pepper for 4–5 minutes until softened and slightly caramelized.

  5. Add Zucchini & Garlic – Stir in zucchini and minced garlic. Cook 2 minutes, stirring frequently.

  6. Incorporate Tomatoes & Olives – Add sun-dried tomatoes, cherry tomatoes, and Kalamata olives. Cook 2–3 minutes until cherry tomatoes begin to release juices.

  7. Return Chicken – Nestle chicken among vegetables, spooning some mixture over top to absorb flavors.

  8. Add Feta & Lemon Juice – Sprinkle feta and drizzle lemon juice over chicken and vegetables. Let sit 1–2 minutes to soften feta and brighten flavors.

  9. Garnish – Remove from heat and sprinkle with fresh parsley. Optional: drizzle with olive oil or add a pinch of black pepper.

  10. Serve – Serve warm with rice, couscous, pasta, or crusty bread.

Notes

For extra flavor, marinate chicken in olive oil, lemon juice, and herbs for 30 minutes before cooking.
