Description
This Mediterranean Potato Salad is a refreshing twist on the classic, packed with tender potatoes, juicy cherry tomatoes, briny olives, and fresh parsley tossed in a zesty olive oil–lemon dressing. A light, wholesome side dish perfect for summer gatherings, BBQs, or everyday meals.
Ingredients
For the Salad:
2 lbs potatoes, peeled and cubed
1/2 cup cherry tomatoes, halved
1/4 cup Kalamata olives, chopped
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
Salt and black pepper, to taste
For the Dressing:
1/4 cup olive oil
2 tbsp lemon juice
Salt and black pepper, to taste
Instructions
- Cook the potatoes: Peel and cube the potatoes into 1–1.5 inch pieces. Boil in salted water for 12–15 minutes until fork-tender but not mushy. Drain and let cool for 5–10 minutes.
- Prep veggies: Halve cherry tomatoes, chop olives, red onion, and parsley.
- Make dressing: In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until combined.
- Assemble: Place cooled potatoes in a large bowl. Add tomatoes, olives, onion, and parsley.
- Toss: Pour dressing over salad and gently toss to coat without breaking the potatoes.
- Adjust & serve: Taste and adjust seasoning. Serve immediately at room temperature or refrigerate 30 minutes for a chilled version.
Notes
Add crumbled feta or grilled halloumi for extra flavor.
Swap parsley with fresh dill or basil for variation.
