Ingredients
2 tablespoons avocado oil
1 lb (450 g) potatoes, cut into ½-inch cubes
1 lb (450 g) lean ground beef
½ cup yellow onion, diced
1 red bell pepper, diced
4 ounces green chiles, diced
1–1 ½ teaspoons kosher salt
Freshly ground black pepper, to taste
2 ½ teaspoons chili powder
1 teaspoon ground cumin
½ teaspoon smoked paprika
¼ cup fresh cilantro, chopped
½ cup shredded cheese (cheddar or Mexican blend)
Instructions

Cook the potatoes: Heat avocado oil in a large skillet over medium heat. Add the cubed potatoes and cook, stirring occasionally, until golden and tender, about 10–12 minutes.

Cook the onions: Push the potatoes to one side of the skillet. Add diced onion and cook until translucent, about 3–4 minutes.

Brown the beef: Add ground beef, breaking it apart with a spatula. Season with salt and black pepper. Cook until no longer pink.

Add vegetables and spices: Mix in red bell pepper, green chiles, chili powder, cumin, and smoked paprika. Cook for 5 minutes, stirring occasionally, until beef is fully cooked and vegetables are tender.

Add fresh herbs: Stir in chopped cilantro.

Melt the cheese: Sprinkle shredded cheese on top. Cover and cook for a few minutes until cheese is melted and bubbly.

Serve: Remove from heat and serve hot. Garnish with extra cilantro or a dollop of sour cream if desired.
Notes
Yukon Gold or red potatoes work best for a creamy texture.
Adjust chili powder and paprika to taste for desired spice level.
