Description

Ingredients

For the Oatmeal Cookies:

1 cup unsalted butter, room temperature

1 cup packed brown sugar (light or dark)

½ cup granulated sugar

1 teaspoon pure vanilla extract

½ tablespoon molasses (not blackstrap)

2 large eggs, room temperature

1¾ cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon pumpkin pie spice (or nutmeg)

3 cups old-fashioned oats

For the Marshmallow Cream Filling:

1 cup unsalted butter, room temperature

7 oz marshmallow fluff/cream

1 cup powdered sugar, sifted

1 teaspoon pure vanilla extract

¼ teaspoon salt


Instructions

  1. Preheat oven: Heat to 350°F (175°C). Line baking sheets with parchment paper.

  2. Cream butter & sugars: Beat butter, brown sugar, and granulated sugar until light and fluffy (2–3 min).

  3. Add flavor: Mix in vanilla and molasses.

  4. Add eggs: Beat in eggs one at a time, scraping the bowl.

  5. Dry mix: Whisk flour, baking soda, salt, cinnamon, and pumpkin pie spice.

  6. Combine: Add dry ingredients to wet in 2 additions; mix just until combined.

  7. Oats: Fold in oats.

  8. Scoop & bake: Scoop 1–1½ Tbsp dough, space 2 in apart, and flatten slightly. Bake 10–12 min, until edges are set but centers look soft.

  9. Cool: Let cool 5 min on sheet, then transfer to rack.

  10. Make filling: Beat butter until smooth, then add marshmallow fluff. Gradually beat in powdered sugar, vanilla, and salt until fluffy.

  11. Assemble pies: Pair cookies of similar size. Pipe or spread 1–2 Tbsp filling on one, then top with its pair.

  12. Set: Chill assembled pies for 10–15 minutes before serving.

Notes

Don’t overbake—the cookies should stay soft and chewy.

Chill assembled pies briefly so the filling sets.
