Ingredients
2 cups elbow macaroni (or pasta of your choice)
4 cups vegetable broth (or water)
1 cup mixed vegetables (broccoli, bell peppers, spinach, etc., fresh or frozen)
2 cups shredded cheese (cheddar or vegan alternative)
1 tablespoon olive oil
1 teaspoon garlic powder
Salt, to taste
Pepper, to taste
Optional: paprika or Italian seasoning, to taste

Instructions

Heat the Olive Oil: In a large pot over medium heat, add 1 tablespoon of olive oil and warm for 30 seconds.

Add Liquid & Seasonings: Pour in 4 cups of vegetable broth (or water). Stir in garlic powder, salt, pepper, and any optional spices.

Cook Pasta & Veggies: Bring to a gentle boil, add 1 cup mixed vegetables, reduce heat to medium, and cook for 8–10 minutes, stirring occasionally until pasta is tender and most liquid is absorbed.
