2 cups shredded cheese (cheddar or vegan alternative)

1 tablespoon olive oil

1 teaspoon garlic powder

Salt, to taste

Pepper, to taste

Optional: paprika or Italian seasoning, to taste

Instructions

  1. Heat the Olive Oil: In a large pot over medium heat, add 1 tablespoon of olive oil and warm for 30 seconds.

  2. Toast the Pasta: Add 2 cups of elbow macaroni and lightly toast for about 1 minute, stirring occasionally.

  3. Add Liquid & Seasonings: Pour in 4 cups of vegetable broth (or water). Stir in garlic powder, salt, pepper, and any optional spices.

  4. Cook Pasta & Veggies: Bring to a gentle boil, add 1 cup mixed vegetables, reduce heat to medium, and cook for 8–10 minutes, stirring occasionally until pasta is tender and most liquid is absorbed.

  5. Add Cheese: Remove pot from heat and stir in 2 cups shredded cheese until fully melted and creamy.

  6. Serve: Scoop into bowls, garnish if desired, and enjoy warm.
