Ingredients
For the Chicken:
2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces (or chicken breast)

2 large eggs, beaten
1 tsp salt
½ tsp black pepper

For the Orange Glaze:
¾ cup fresh orange juice (from 3–4 large oranges)
Zest of 2 oranges
⅓ cup rice vinegar (or apple cider vinegar)
⅓ cup brown sugar (or coconut sugar)
3 tbsp soy sauce (or tamari for gluten-free)
2 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tbsp cornstarch mixed with 2 tbsp water (slurry)
1 tsp red pepper flakes (optional)
2 green onions, sliced for garnish
Instructions
Step 1: Prepare the Coating Station

In a large bowl, whisk together flour, cornstarch, salt, and pepper.

In another bowl, beat the eggs until smooth.
Step 2: Coat the Chicken

Dip each chicken piece first in the beaten eggs.

Dredge thoroughly in the flour mixture for full coverage and maximum crispiness.
Step 3: Heat the Oil

Pour oil into a heavy-bottomed pot or deep fryer to 2–3 inches deep.
