Description

2 large boneless, skinless chicken breasts (grilled, roasted, or leftover cooked)

1 cup fresh basil pesto (store-bought or homemade)

4 pieces of flatbread (naan, pita, or homemade)

1 cup shredded mozzarella cheese

½ cup cherry tomatoes, halved

¼ cup grated Parmesan cheese

2 tbsp olive oil

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)


Instructions

  1. Preheat oven — Set oven to 400°F (200°C). Place rack in the center.

  2. Prepare flatbread — Place naan, pita, or flatbread on a baking sheet or pizza stone.

  3. Spread pesto — Evenly coat flatbread with pesto, leaving a ¼-inch border.

  4. Cook chicken — Season chicken breasts (salt, pepper, optional oregano/garlic powder) and grill, roast, or use leftovers.

  5. Chop chicken — Slice into bite-sized pieces and distribute evenly over pesto.

  6. Add toppings — Scatter cherry tomatoes (and optional veggies like spinach, onion, or peppers).

  7. Add cheese — Sprinkle mozzarella and Parmesan generously on top.

  8. Bake — Bake 10–12 minutes until cheese is melted, bubbly, and golden.

  9. Finish & serve — Let rest 1–2 minutes. Garnish with basil, drizzle olive oil or extra pesto, slice, and enjoy hot.
