- 1 lb sausage (Italian or chicken sausage work well)
- 2 large sweet potatoes, peeled and cubed
- 1/4 cup honey
- 3 garlic cloves, minced
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Peel and cube the sweet potatoes into even chunks.
- Toss sweet potatoes with olive oil, paprika, salt, and pepper until coated.
- Spread them on a baking sheet and roast for 20 minutes, stirring once halfway.
- Meanwhile, slice sausage into rounds and cook in a skillet over medium heat until browned, about 6–8 minutes.
- Whisk honey, minced garlic, and soy sauce together in a small bowl.
- Pour the honey garlic mixture over the cooked sausage, stirring to coat. Simmer 1–2 minutes until slightly thickened.
- Add the sauced sausage to the roasted sweet potatoes on the baking sheet. Return to the oven for 10 minutes so flavors blend.
- Garnish with chopped parsley and serve warm. Great with a simple spinach and apple salad on the side.
Notes
Cut sweet potatoes into equal-sized cubes for even roasting. Try spicy sausage for extra heat or swap honey with maple syrup for a twist.
