Description

Tender Slow Cooker Mediterranean Chicken with vibrant peppers, olives, and aromatic herbs. A one-pot, healthy Mediterranean meal perfect for family dinners.


Ingredients

2 pounds boneless, skinless chicken thighs

1 large red onion, thinly sliced

3 cloves garlic, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup Kalamata olives, pitted

1 can (14 oz) diced tomatoes

½ cup chicken broth

2 tablespoons olive oil

2 tablespoons fresh lemon juice

1 tablespoon dried oregano

1 teaspoon dried thyme

1 teaspoon dried rosemary

½ teaspoon red pepper flakes

Salt and black pepper, to taste

¼ cup fresh parsley, chopped

½ cup crumbled feta cheese (optional)

1 lemon, sliced, for garnish


Instructions

  1. Prepare base: Layer sliced red onion and minced garlic at the bottom of the slow cooker.

  2. Add chicken and vegetables: Place chicken thighs on top, then layer red and yellow bell peppers.

  3. Add olives and tomatoes: Sprinkle in Kalamata olives and pour over diced tomatoes and chicken broth.

  4. Prepare seasoning: In a small bowl, whisk olive oil, lemon juice, oregano, thyme, rosemary, red pepper flakes, salt, and black pepper. Drizzle over chicken and vegetables.

  5. Cook: Cover and cook on low for 6–8 hours or on high for 4–5 hours until chicken is tender and cooked through.

  6. Finish & serve: Sprinkle with fresh parsley and crumbled feta cheese. Garnish with lemon slices and serve warm.

Notes

Marinate chicken overnight in olive oil, lemon juice, and garlic for deeper flavor.

Use chicken thighs for juicier results; skinless keeps it healthy.
