Ingredients
For the Salad:
4 cups baby spinach
2 cups fresh blueberries
1 cup raw walnuts
1 medium-large avocado, cut into chunks
1/2 cup goat cheese, crumbled
1/4 cup fresh mint, torn into small pieces
Salt and pepper, to taste
For the Balsamic Vinaigrette:
1/4 cup olive oil
2 tbsp balsamic vinegar
Juice of 1/2 lemon
1 tsp garlic powder (or 2 cloves fresh garlic, minced)
1 tsp honey
Salt and pepper, to taste
Instructions
- Prepare greens: Wash and dry 4 cups of baby spinach, then place in a large salad bowl.
- Add fruits and nuts: Mix in 2 cups of blueberries, 1 cup raw walnuts, and 1 avocado cut into chunks.
- Top with cheese and herbs: Sprinkle 1/2 cup crumbled goat cheese and 1/4 cup fresh mint over the salad.
- Season: Add a pinch of salt and pepper.
- Make vinaigrette: In a small bowl, whisk together olive oil, balsamic vinegar, lemon juice, garlic, honey, salt, and pepper until emulsified.
