1 cup minced jalapeño peppers (seeds removed for less heat)
1/4 cup fresh lemon juice
2 ounces (1 packet) powdered fruit pectin
7 cups white sugar
8 half-pint canning jars with lids and rings
Instructions
-
Prepare the strawberries and jalapeños. Crush strawberries and mince jalapeños, removing seeds if desired. Wear gloves to handle jalapeños.
-
In a large pot, combine crushed strawberries and minced jalapeños.
-
Stir in fresh lemon juice.
-
Sprinkle powdered fruit pectin into the mixture and mix thoroughly.
-
Gradually add sugar while stirring constantly.
-
Bring mixture to a boil over medium heat, stirring to dissolve sugar and thicken the jam.
-
Carefully pour hot jam into prepared jars, leaving headspace at the top. Wipe rims clean.
-
Place lids and rings on jars. Optionally, process jars in a boiling water bath for longer storage.
-
Allow jars to cool completely. Store in a cool, dark place. Refrigerate after opening.
Notes
Squeeze excess moisture from strawberries if needed to improve jam consistency.
Adjust jalapeño quantity to control spiciness.
