¼ cup peanut butter

¼ cup low-sodium soy sauce (or Tamari)

2 Tbsp brown sugar or honey

2 Tbsp rice vinegar

½ Tbsp minced garlic

½ Tbsp minced ginger

1 tsp sriracha sauce

12 Tbsp water (optional, for consistency)

Wrap Filling:

2 cooked and chopped chicken breasts

3 cups coleslaw mix

½ cup grated carrot (optional)

¼ cup chopped cilantro

¼ cup roasted, salted peanuts

46 soft tortillas


Instructions

  • Prepare the Peanut Dressing:

    • In a bowl, whisk together peanut butter, soy sauce, brown sugar (or honey), rice vinegar, garlic, ginger, and sriracha.

    • Adjust consistency with 1–2 Tbsp of water if needed.

  • Assemble the Wraps:

    • Lay out tortillas and evenly distribute chopped chicken, coleslaw mix, and optional grated carrots.

    • Sprinkle with chopped cilantro and roasted peanuts.

    • Drizzle generously with peanut dressing.

 

  • Roll & Serve:

    • Roll tortillas tightly, slice in half, and serve immediately.

Notes

For extra flavor, marinate chicken in a bit of soy sauce and ginger before cooking.

Use crunchy coleslaw or add bell peppers for additional texture.
