Ingredients
Scale
- 2 cups all-purpose flour
- ½ cup unsalted butter, softened
- ¼ cup granulated sugar
- 1 large egg yolk
- 2 tablespoons cold water
- 1 teaspoon vanilla extract
- 16 oz mascarpone cheese, room temperature
- ¾ cup heavy whipping cream
- ½ cup powdered sugar
- 3 large egg yolks
- 1 cup strong espresso, cooled
- 3 tablespoons coffee liqueur
- 2 packages ladyfinger cookies, crushed
- Unsweetened cocoa powder for dusting
Instructions
- Preheat oven to 350°F. Grease a 12-cup muffin tin well.
- Cream butter and sugar until light. Beat in egg yolk and vanilla.
- Add flour gradually, then cold water until dough forms. Shape into 12 muffin cups to form shells.
- Bake 12–15 minutes until edges are golden. Cool completely before removing.
- Whip cream to soft peaks and refrigerate. Beat mascarpone with powdered sugar and egg yolks until smooth. Fold in whipped cream gently.
- Mix cooled espresso with coffee liqueur in a shallow dish.
- Place crushed ladyfingers in each cookie cup and drizzle with coffee mixture.
- Spoon or pipe mascarpone mixture over cookies. Dust with cocoa powder before serving.
Notes
Cool cookie cups fully before filling to prevent melting the cream mixture. For alcohol-free versions, replace coffee liqueur with extra espresso and a splash of vanilla.
